Winter White Bean and Italian Sausage Soup
Ingredients:
- 1 lb. Italian sausage (mild or spicy)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cans white beans (Great Northern or cannellini), drained and rinsed
- 2 cups chopped kale or spinach
- 1 tsp. dried oregano
- 1 tsp. dried basil
- Salt and pepper, to taste
Instructions:
- Brown the Sausage:
- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove the sausage from the pot and set aside.
- Sauté Onions and Garlic:
- In the same pot, add a little olive oil if needed. Add the diced onion and minced garlic, cooking until the onions are softened, about 5 minutes.
- Add Broth and Beans:
- Add the chicken broth, white beans, dried oregano, and dried basil to the pot. Bring the mixture to a simmer and cook for 15 minutes.
- Combine and Simmer:
- Return the cooked sausage to the pot. Add the chopped kale or spinach, cooking until the greens are wilted, about 5 minutes.
- Season and Serve:
- Season the soup with salt and pepper to taste.
