Turkey Rice Soup
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup uncooked white rice
- 4 cups chicken broth
- 2 cups water
- 2 cups diced cooked turkey
- 1 cup frozen peas
- Salt and pepper, to taste
- Optional: chopped fresh herbs for garnish
Instructions:
- Sauté Vegetables:
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
- Add Rice:
- Add the uncooked white rice to the pot and stir to combine with the vegetables.
- Add Liquids:
- Pour in the chicken broth and water. Stir well to combine all the ingredients.
- Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook for 20-25 minutes, or until the rice is tender and cooked through.
- Add Turkey and Peas:
- Once the rice is cooked, add the diced cooked turkey and frozen peas to the pot.
- Continue to simmer the soup for an additional 5 minutes, or until the turkey is heated through and the peas are tender.
- Season and Serve:
- Season the soup with salt and pepper to taste.
- Serve the turkey rice soup hot, garnished with chopped fresh herbs if desired.
