Tomato Basil Soup
Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (28 ounces each) diced tomatoes
- 4 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh basil
- Salt and pepper, to taste
Instructions:
- Sauté Aromatics:
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Cook until softened, about 5 minutes.
- Add Tomatoes and Broth:
- Add the diced tomatoes (with their juices) and broth to the pot.
- Bring the mixture to a simmer and let it cook for about 15 minutes.
- Blend Soup:
- Use an immersion blender directly in the pot, or transfer the soup to a blender, and blend until smooth. Be cautious when blending hot liquids.
- Add Cream and Basil:
- Once smooth, return the soup to the pot (if necessary).
- Stir in the heavy cream and chopped fresh basil.
- Season and Serve:
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with additional basil leaves if desired.
