Tomato Basil Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (28 ounces each) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste

Instructions:

  1. Sauté Aromatics:
    • Heat the olive oil in a large pot over medium heat.
    • Add the diced onion and minced garlic. Cook until softened, about 5 minutes.
  2. Add Tomatoes and Broth:
    • Add the diced tomatoes (with their juices) and broth to the pot.
    • Bring the mixture to a simmer and let it cook for about 15 minutes.
  3. Blend Soup:
    • Use an immersion blender directly in the pot, or transfer the soup to a blender, and blend until smooth. Be cautious when blending hot liquids.
  4. Add Cream and Basil:
    • Once smooth, return the soup to the pot (if necessary).
    • Stir in the heavy cream and chopped fresh basil.
  5. Season and Serve:
    • Season the soup with salt and pepper to taste.
    • Serve hot, garnished with additional basil leaves if desired.
