Thai Shrimp Soup
Ingredients:
- 1 lb. raw shrimp, peeled and deveined
- 4 cups chicken broth
- 2 cups coconut milk
- 2 tbsp. red curry paste
- 1 tbsp. fish sauce
- 1 tbsp. brown sugar
- 1 tbsp. lime juice
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 2 green onions, sliced
- 1 handful of cilantro, chopped
- 1 tbsp. vegetable oil
Instructions:
- Heat Oil:
- In a large pot, heat the vegetable oil over medium heat.
- Cook Curry Paste:
- Add the red curry paste to the pot and stir for 1-2 minutes until fragrant.
- Add Liquids and Seasonings:
- Pour in the chicken broth, coconut milk, fish sauce, brown sugar, and lime juice.
- Bring the mixture to a simmer.
- Cook Vegetables:
- Add the sliced bell pepper, mushrooms, and green onions to the pot.
- Simmer for 5-7 minutes, or until the vegetables are tender.
- Cook Shrimp:
- Add the raw shrimp to the soup and cook until they turn pink and are fully cooked, about 3-5 minutes.
- Taste and Adjust:
- Taste the soup and adjust the seasoning if necessary.
- Serve:
- Serve the soup hot, garnished with chopped cilantro.
