Tasty Mushroom Soup
This delightful mushroom soup is rich, creamy, and bursting with flavor. Here’s how to make it:
Ingredients:
- 1 lb mixed mushrooms (cremini, shiitake, oyster), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cups heavy cream
- 1/4 cup dry white wine
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon thyme leaves
- Salt and pepper, to taste
- Chopped parsley, for garnish (optional)
Instructions:
- In a large pot or Dutch oven, heat the olive oil and butter over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened, about 5 minutes.
- Toss in the sliced mushrooms and thyme leaves, cooking for 8-10 minutes until browned and softened.
- Pour in the white wine, letting it simmer for a couple of minutes.
- Add the broth, bringing the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.
- Remove from heat and blend the soup until smooth using a blender or immersion blender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Heat the soup back on the stove over medium heat until hot.
- Serve the soup in bowls and garnish with chopped parsley, if desired.
