Strawberry Cream Cheese Icebox Cake


  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup sliced fresh strawberries
  • 24 graham crackers


  1. In a large bowl, beat the heavy cream until stiff peaks form.
  2. Add the granulated sugar and vanilla extract to the bowl, and continue beating until fully combined.
  3. In a separate bowl, beat the cream cheese until smooth.
  4. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  5. Spread a thin layer of the cream cheese mixture in the bottom of a 9×13 inch baking dish.
  6. Place a layer of graham crackers on top of the cream cheese mixture, breaking the crackers into smaller pieces to fit any gaps.
  7. Add a layer of sliced strawberries on top of the graham crackers.
  8. Spread another layer of the cream cheese mixture on top of the strawberries.
  9. Repeat steps 6-8 until all of the ingredients have been used up, ending with a layer of the cream cheese mixture on top.
  10. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  11. Before serving, top the cake with additional sliced strawberries if desired.
