Spinach and cheese stuffed cauliflower patties


  • 1 large head of cauliflower, cut into florets
  • 2 cups fresh spinach leaves, chopped
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup bread crumbs
  • 2 eggs, beaten
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • Salt and pepper, to taste


  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Steam the cauliflower florets until they are tender, then let them cool.
  3. Place the cooled cauliflower florets into a large mixing bowl and mash them with a fork or a potato masher.
  4. Add the chopped spinach leaves, grated mozzarella cheese, grated parmesan cheese, bread crumbs, beaten eggs, chopped parsley, minced garlic, olive oil, salt, and pepper to the mixing bowl with the mashed cauliflower.
  5. Mix all the ingredients together until they are well combined.
  6. Using your hands, form the mixture into patties, pressing them together firmly.
  7. Place the patties onto the prepared baking sheet, spacing them evenly apart.
  8. Bake for 25-30 minutes, or until the patties are golden brown on the outside and cooked through on the inside.
  9. Remove the baking sheet from the oven and let the patties cool for a few minutes before serving.
