Southern Fried Chicken


  • 4 chicken legs or thighs, skin-on and bone-in
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup buttermilk
  • 1 large egg
  • Vegetable oil, for frying


  1. In a mixing bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
  2. In another mixing bowl, whisk together the buttermilk and egg.
  3. Dip each chicken piece in the buttermilk mixture, making sure it’s fully coated.
  4. Dredge the chicken in the flour mixture, pressing the flour onto the chicken to ensure it’s fully coated.
  5. Heat the vegetable oil in a large skillet over medium-high heat.
  6. Add the chicken to the skillet, skin-side down. Make sure not to overcrowd the skillet, as this will cause the chicken to steam instead of fry.
  7. Fry the chicken for 8-10 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C).
  8. Remove the chicken from the skillet and place it on a plate lined with paper towels to absorb any excess oil.
  9. Repeat the process with the remaining chicken pieces.
