Ingredients:
- 4 Italian sausage links
- 1 head of broccoli, cut into florets
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 cup shredded cheddar cheese
- 4 tbsp olive oil
- 2 tbsp chopped fresh parsley
- Salt and pepper, to taste

Directions:
- Preheat your oven to 400°F (200°C).
- Cut 4 large sheets of aluminum foil (about 12 inches each).
- Divide the broccoli florets, red onion slices, and red bell pepper slices among the 4 sheets of foil.
- Drizzle each pack with 1 tablespoon of olive oil.
- Season the veggies with salt and pepper to taste.
- Top each pack with a sausage link.
- Sprinkle the cheddar cheese evenly over each pack.
- Fold up the sides of each foil pack and seal tightly.
- Place the foil packs on a baking sheet and bake for 25-30 minutes, or until the sausage is fully cooked and the veggies are tender.
- Carefully open the foil packs and sprinkle with chopped fresh parsley before serving.
