Sausage Broccoli Cheddar Foil Packs

Ingredients:

  • 4 Italian sausage links
  • 1 head of broccoli, cut into florets
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup shredded cheddar cheese
  • 4 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • Salt and pepper, to taste

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut 4 large sheets of aluminum foil (about 12 inches each).
  3. Divide the broccoli florets, red onion slices, and red bell pepper slices among the 4 sheets of foil.
  4. Drizzle each pack with 1 tablespoon of olive oil.
  5. Season the veggies with salt and pepper to taste.
  6. Top each pack with a sausage link.
  7. Sprinkle the cheddar cheese evenly over each pack.
  8. Fold up the sides of each foil pack and seal tightly.
  9. Place the foil packs on a baking sheet and bake for 25-30 minutes, or until the sausage is fully cooked and the veggies are tender.
  10. Carefully open the foil packs and sprinkle with chopped fresh parsley before serving.
