  • 1 whole chicken (about 3-4 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lemon, cut into wedges
  • 1 onion, cut into wedges
  • 4-5 garlic cloves, peeled


  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken and pat it dry with paper towels. Place it on a roasting pan or baking dish.
  3. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, thyme, and rosemary.
  4. Rub the seasoning mixture all over the chicken, making sure to get some under the skin and inside the cavity.
  5. Stuff the lemon wedges, onion wedges, and garlic cloves inside the chicken cavity.
  6. Place the chicken in the preheated oven and roast for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) when checked with a meat thermometer.
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Serve the chicken with your favorite sides and enjoy!

Note: For a crisper skin, you can increase the oven temperature to 450°F (230°C) for the last 10-15 minutes of cooking.
