Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, cut into wedges
- 1 onion, cut into wedges
- 4-5 garlic cloves, peeled

Instructions:
- Preheat your oven to 425°F (220°C).
- Rinse the chicken and pat it dry with paper towels. Place it on a roasting pan or baking dish.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, thyme, and rosemary.
- Rub the seasoning mixture all over the chicken, making sure to get some under the skin and inside the cavity.
- Stuff the lemon wedges, onion wedges, and garlic cloves inside the chicken cavity.
- Place the chicken in the preheated oven and roast for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) when checked with a meat thermometer.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
- Serve the chicken with your favorite sides and enjoy!
Note: For a crisper skin, you can increase the oven temperature to 450°F (230°C) for the last 10-15 minutes of cooking.
