Ingredients:
- 2 medium zucchini, sliced into thin rounds
- 1/2 cup all-purpose flour
- 2 teaspoons ranch seasoning mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Cooking spray

Instructions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a small bowl, mix together the flour, ranch seasoning mix, garlic powder, paprika, salt, and black pepper.
- In a separate bowl, beat the eggs.
- Place the panko breadcrumbs in a third bowl.
- Coat each zucchini slice with the flour mixture, then dip it into the beaten eggs, and finally coat it in the panko breadcrumbs.
- Place the coated zucchini slices on the prepared baking sheet.
- Spray the zucchini slices with cooking spray.
- Bake for 20-25 minutes or until the zucchini chips are golden brown and crispy.
- Serve hot and enjoy your Ranch Zucchini Chips!
You can also dip them in your favorite dipping sauce such as ranch or tzatziki.
