Portuguese Linguica & Cabbage Soup
Ingredients:
- 1 pound linguica sausage, sliced
- 1 small head of cabbage, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 2 cups water
- 1 can diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Olive oil, for sautéing
- Optional: small potatoes, carrots, or white beans for added thickness
Instructions:
- Prepare the Linguica:
- Heat a large pot over medium heat and add a drizzle of olive oil.
- Add the sliced linguica sausage and cook until browned on both sides. Remove the sausage from the pot and set it aside.
- Sauté the Aromatics:
- In the same pot, add a little more olive oil if needed and sauté the diced onions and minced garlic until they become soft and fragrant.
- Add the Vegetables and Broth:
- Add the chopped cabbage to the pot along with the chicken or vegetable broth, water, and diced tomatoes (with their juices).
- Season the Soup:
- Stir in the smoked paprika, dried oregano, salt, and pepper.
- Simmer the Soup:
- Bring the soup to a simmer and cook until the cabbage is tender, about 20-25 minutes.
- If desired, add small diced potatoes, carrots, or white beans to the soup for added thickness and texture.
- Add the Linguica:
- Return the browned linguica sausage to the pot and simmer for an additional 10 minutes to allow the flavors to meld together.
- Adjust Seasoning:
- Taste the soup and adjust the seasoning with more salt and pepper if necessary.
- Serve:
- Ladle the hot soup into bowls and serve with crusty bread or bread rolls for a complete meal.
Notes:
- Linguica Substitute: If you cannot find linguica, you can substitute it with chorizo or andouille sausage for a similar spicy flavor.
