Portuguese Linguica & Cabbage Soup

Ingredients:

  • 1 pound linguica sausage, sliced
  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil, for sautéing
  • Optional: small potatoes, carrots, or white beans for added thickness

Instructions:

  1. Prepare the Linguica:
    • Heat a large pot over medium heat and add a drizzle of olive oil.
    • Add the sliced linguica sausage and cook until browned on both sides. Remove the sausage from the pot and set it aside.
  2. Sauté the Aromatics:
    • In the same pot, add a little more olive oil if needed and sauté the diced onions and minced garlic until they become soft and fragrant.
  3. Add the Vegetables and Broth:
    • Add the chopped cabbage to the pot along with the chicken or vegetable broth, water, and diced tomatoes (with their juices).
  4. Season the Soup:
    • Stir in the smoked paprika, dried oregano, salt, and pepper.
  5. Simmer the Soup:
    • Bring the soup to a simmer and cook until the cabbage is tender, about 20-25 minutes.
    • If desired, add small diced potatoes, carrots, or white beans to the soup for added thickness and texture.
  6. Add the Linguica:
    • Return the browned linguica sausage to the pot and simmer for an additional 10 minutes to allow the flavors to meld together.
  7. Adjust Seasoning:
    • Taste the soup and adjust the seasoning with more salt and pepper if necessary.
  8. Serve:
    • Ladle the hot soup into bowls and serve with crusty bread or bread rolls for a complete meal.

Notes:

  • Linguica Substitute: If you cannot find linguica, you can substitute it with chorizo or andouille sausage for a similar spicy flavor.
