Peachy Keen Bars


  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 can (21 ounces) peach pie filling
  • 1/2 cup sliced almonds


  1. Preheat the oven to 350°F (180°C). Grease a 9×13 inch baking dish with cooking spray or butter.
  2. In a large bowl, whisk together the flour, sugar, and salt.
  3. Cut the butter into small pieces and add it to the bowl. Using a pastry blender or your hands, mix the butter into the dry ingredients until the mixture is crumbly.
  4. Add the egg and vanilla extract to the bowl and mix until a dough forms.
  5. Press about two-thirds of the dough into the bottom of the prepared baking dish, using your hands or a spatula to smooth it out.
  6. Pour the peach pie filling over the dough and spread it out evenly.
  7. Crumble the remaining dough over the top of the peach filling.
  8. Sprinkle the sliced almonds over the crumbled dough.
  9. Bake for 40-45 minutes, or until the edges are golden brown and the top is lightly browned.
  10. Let the bars cool in the pan for at least 10-15 minutes before slicing into squares and serving.
