For the filling:

  • 6 cups sliced fresh peaches (about 6-7 peaches)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

For the topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water
  • 1 tbsp sugar mixed with 1 tsp cinnamon for sprinkling


  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine the sliced peaches, sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch. Mix well and set aside.
  3. In a separate mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. Add the chilled butter to the flour mixture and cut in with a pastry blender or your hands until the mixture resembles coarse crumbs.
  5. Add the boiling water to the flour mixture and stir until a dough forms.
  6. Place the peach mixture into a 9×13 inch baking dish.
  7. Drop spoonfuls of the dough mixture over the top of the peaches, spreading it out to cover the surface as evenly as possible.
  8. Sprinkle the cinnamon sugar mixture over the top of the dough.
  9. Bake for 40-45 minutes, or until the top is golden brown and the peaches are bubbling.
  10. Remove from the oven and let cool for a few minutes before serving.
