Ingredients:
For the filling:
- 6 cups sliced fresh peaches (about 6-7 peaches)
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 tbsp lemon juice
- 2 tbsp cornstarch
For the topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 1/4 cup boiling water
- 1 tbsp sugar mixed with 1 tsp cinnamon for sprinkling

Instructions:
- Preheat oven to 375°F.
- In a mixing bowl, combine the sliced peaches, sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch. Mix well and set aside.
- In a separate mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the chilled butter to the flour mixture and cut in with a pastry blender or your hands until the mixture resembles coarse crumbs.
- Add the boiling water to the flour mixture and stir until a dough forms.
- Place the peach mixture into a 9×13 inch baking dish.
- Drop spoonfuls of the dough mixture over the top of the peaches, spreading it out to cover the surface as evenly as possible.
- Sprinkle the cinnamon sugar mixture over the top of the dough.
- Bake for 40-45 minutes, or until the top is golden brown and the peaches are bubbling.
- Remove from the oven and let cool for a few minutes before serving.
