Oven layer strawberry-cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup strawberry puree (puree fresh or frozen strawberries in a blender or food processor)

Instructions:

  1. Preheat the oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix in the flour mixture, alternating with the milk, until just combined.
  6. Fold in the strawberry puree until evenly distributed.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, spread a layer of frosting on one cake, then place the other cake on top. Continue to frost the entire cake with frosting and garnish with fresh strawberries, if desired.
