Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon minced garlic
  • 1 jalapeno, seeded and chopped
  • 1 cup unsweetened almond milk
  • 1/4 cup heavy cream
  • 3 ounces cream cheese
  • 1 (4 ounce) can green chili
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1 cup grated cheddar cheese
  • 5 cups chopped chicken
  • 1/2 cup grated cheddar cheese (for topping)

Instructions:

  1. In a large skillet over medium heat, melt the butter. Add the garlic and jalapeno, and sauté for 30 seconds.
  2. Pour in the almond milk and heavy cream. Add the cream cheese, green chili, paprika, cumin, onion powder, and 1 cup of grated cheddar cheese.
  3. Whisk until the mixture is smooth and the cheese has melted.
  4. Stir in the chopped chicken and top with the remaining 1/2 cup of grated cheddar cheese.
  5. Reduce the heat to low, cover, and simmer for 10 minutes.
