One Pan Keto Green Chili Chicken
This easy One Pan Keto Green Pepper Chicken is a low-carb casserole with cheese! At under 4 net carbs per serving, this will be a weekly staple on your keto diet!
Ingredients:
- 1 tablespoon butter
- 1 tablespoon minced garlic
- 1 jalapeno, seeded and chopped
- 1 cup unsweetened almond milk
- 1/4 cup heavy cream
- 3 ounces cream cheese
- 1 (4 ounce) can green chili
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon onion powder
- 1 cup grated cheddar cheese
- 5 cups chopped chicken
- 1/2 cup grated cheddar cheese (for topping)
Instructions:
- In a large skillet over medium heat, melt the butter. Add the garlic and jalapeno, and sauté for 30 seconds.
- Pour in the almond milk and heavy cream. Add the cream cheese, green chili, paprika, cumin, onion powder, and 1 cup of grated cheddar cheese.
- Whisk until the mixture is smooth and the cheese has melted.
- Stir in the chopped chicken and top with the remaining 1/2 cup of grated cheddar cheese.
- Reduce the heat to low, cover, and simmer for 10 minutes.
- Garnish with chopped scallions, additional jalapeno slices, or avocado before serving.
