Lemon Mug Cake
Ingredients:
For the cake:
- 1 large egg
- 2-3 tablespoons lemon juice
- 1 teaspoon sweetener (such as Stevia)
- 1/4 teaspoon baking powder
- 2 tablespoons coconut flour
- 2 tablespoons heavy whipping cream (HWC)
- 1/2 pinch salt
- 1/2 tablespoon lemon zest
For the frosting:
- 2 tablespoons heavy whipping cream (HWC)
- 1 teaspoon sweetener (such as Stevia)
- 1 tablespoon lemon juice
- 1 tablespoon cream cheese (softened)
Instructions:
- In a small bowl, combine all the wet ingredients including the egg and lemon zest. Whisk together until well combined.
- In another bowl, combine all the dry ingredients. Add the dry ingredients to the wet mixture and stir until completely combined.
- Transfer the batter to a 7 oz. ramekin or a coffee mug with a wide base.
- Place the ramekin or mug in the microwave and cook for 90 seconds. If the center is still wet, microwave for an additional 10 seconds.
- To make the frosting, whisk together the heavy whipping cream, sweetener, lemon juice, and softened cream cheese until you get a frosting-like consistency.
- Once the cake is done, carefully cut around the edges and place a plate on top of the ramekin or mug. Flip it over (be cautious as it will be hot).
- Pour the frosting over the cake and garnish with lemon zest.

1 LG Egg

1 Tbsp Cream Cheese (SOFT)!!
Whisk all together til you get a
Frosting/Sauce
Once the cake is done cut around the edges put a plate on top of ramekin or mug and flip over. *Caution it will be HOT!! Then I pour frosting/sauce over top and garnish with lemon zest! Delicious
