Ingredients:
- 3 medium zucchinis, sliced lengthwise into thin strips
- 1 lb ground beef
- 1 cup ricotta cheese
- 1 egg
- 2 cups sugar-free marinara sauce
- 2 cups shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish

Instructions:
- Preheat your oven to 375°F.
- Heat the olive oil in a skillet over medium heat.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spatula.
- Add the marinara sauce to the skillet with the ground beef and stir to combine. Set aside.
- In a bowl, mix together the ricotta cheese, egg, and grated parmesan cheese. Set aside.
- Season the zucchini strips with salt and pepper.
- Lay out a zucchini strip and spread a spoonful of the ricotta mixture on top.
- Roll up the zucchini strip and place it seam-side down in a baking dish.
- Repeat with the remaining zucchini strips and ricotta mixture.
- Pour the ground beef and marinara sauce over the zucchini rolls.
- Sprinkle shredded mozzarella cheese on top of the rolls.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
