Keto zucchini lasagna rolls

Ingredients:

  • 3 medium zucchinis, sliced lengthwise into thin strips
  • 1 lb ground beef
  • 1 cup ricotta cheese
  • 1 egg
  • 2 cups sugar-free marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 375°F.
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spatula.
  4. Add the marinara sauce to the skillet with the ground beef and stir to combine. Set aside.
  5. In a bowl, mix together the ricotta cheese, egg, and grated parmesan cheese. Set aside.
  6. Season the zucchini strips with salt and pepper.
  7. Lay out a zucchini strip and spread a spoonful of the ricotta mixture on top.
  8. Roll up the zucchini strip and place it seam-side down in a baking dish.
  9. Repeat with the remaining zucchini strips and ricotta mixture.
  10. Pour the ground beef and marinara sauce over the zucchini rolls.
  11. Sprinkle shredded mozzarella cheese on top of the rolls.
  12. Cover the baking dish with foil and bake for 20 minutes.
  13. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  14. Garnish with fresh basil leaves before serving.
