Do you have a favorite appetizer to order when you go out for a drink with your friends? I’m a big fan of soft bagels, especially when it comes to cheese sauce! Of course, going keto had changed that habit…until now!

Pretzel bites are something very nostalgic for me. I remember the first time I went to the mall with my friends (and without my family) we shared a giant pretzel and lemonade. In the summer, the baseball field, the fair, the amusement parks, the movie theaters… All these places are made even better with a big, salty, soft pretzel!

I’ll be completely honest—This recipe is pretty picky. I promise it’s worth it though! Crispy on the outside, dense on the inside, hard to get soft without traditional (carb-filled) ingredients.

However, don’t worry! With the specific ingredients and techniques I describe below, we get delicious, low-carb, keto-friendly pretzel bites with no guilt. Enjoy these Keto Pretzel Bites and think of simpler times!

Ingredients for Keto Pretzel Bites

While most of my recipes are pretty flexible and I try to add notes about substitutions, this is not a recipe I recommend making substitutions for. This recipe uses both almond and coconut flour, and the mix really provided the best texture and lift. To make Keto Pretzel Bites you will need:

mozzarella cheese
Cream cheese
Baking powder
Whole Eggs and Egg Whites
Ingredients: sesame, sea salt, poppy seeds

How to make Low-Carb Pretzel Bites?
Start by adding the almond flour, coconut flour, and baking powder to a bowl and mixing well. Next, beat an egg white until it has tripled in volume (see photo) this is important because it allows the bagels to rise perfectly.

These pretzel bites are made from a “greasy head dough” base. This means heating the shredded mozzarella cheese and cream cheese until they are completely melted. Dry ingredients are mixed after the melted cheese is mixed until smooth.

Then add the egg and the beaten egg white. Knead the dough well, then make a soft dough with your hands. Divide the dough into two parts and roll them into a long thin line. Use a knife to cut the dough into one-inch bite-sized pieces. Brush each one with the last egg white and top with your desired seasoning.

Tips for the Best Keto Pretzel

Measure and prepare everything before you begin. This is very important as the base of the dough is melted cheese. If the cheese gets too cold, you will have a hard time kneading a smooth dough.
Don’t skip beating the egg white. Here’s a photo of my scrambled egg white showing how this should look if you’re unsure. This helps to provide lift and give bites the right texture.
Brush bites liberally with egg white to get that perfect golden brown color and slightly crunchy texture.
Don’t forget to add a topping! You can use sea salt, any seasoning, or any other sauce if you wish, but you definitely want to add salt to the bagel bites for the best flavor.

How to make Low-Carb Cheese Sauce?
Usually cheese sauces require combining flour and butter to make a roux. This will help thicken the cheese sauce and give you that wonderfully creamy texture. My low-carb cheese sauce skips the roux and uses butter, heavy cream, and a good chunk of sharp cheddar cheese instead!

To make the cheese sauce, melt the butter in a saucepan over medium heat, add the cream, grated cheddar and mix until creamy. It really couldn’t be easier!

Contents:

2 cups grated mozzarella cheese
2 ounces cream cheese
1 1/2 cups almond flour
1 tablespoon of coconut flour
2 teaspoons of baking powder
1 large egg
1 large egg white, beaten until tripled in volume
For the above
1 large egg white
1 1/2 tablespoons sea salt or whatever seasoning to sprinkle on top
cheese sauce
1 tablespoon of butter
1/4 cup heavy cream
1 cup good quality grated sharp cheddar cheese


Instructions:

Before you start measuring and preparing everything in advance, you should process the dough while the cheese is hot, so it is time sensitive.

Preheat the oven to 400 degrees F.
Melt the shredded mozzarella and cream cheese in a microwave-safe bowl in 30-second intervals until completely melted. Blend until smooth.
In a second bowl, combine the almond flour, coconut flour, and baking powder, mixing well.
Combine the melted cheese with the flour mixture. Mix the dough and work the flour into the cheese as much as possible.
Then add the whole egg and the beaten egg, mixing the mixture until a soft dough forms. Then knead the dough using your hands until you are sure that the eggs, flour and cheese are worked together in the dough. Make sure there are no egg streaks, you want it to be fully incorporated.
Divide the dough into two parts, roll into a long thin rope. Use a knife to cut into small 1-inch pieces. (I had a total of 80 small pretzel bites)
Brush egg white on the phyllo and sprinkle any seasoning you want on it.
Bake for 10-12 minutes until golden brown.
