Ingredients:
- 1 1/2 cups almond flour
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped pepperoni

Instructions:
- Preheat your oven to 350°F (180°C).
- Grease a 12-cup muffin tin with cooking spray.
- In a large mixing bowl, whisk together the almond flour, baking powder, garlic powder, dried oregano, and salt.
- In another mixing bowl, whisk together the eggs, almond milk, and tomato sauce until smooth.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Fold in the shredded mozzarella cheese and chopped pepperoni.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 15-20 minutes or until golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
