Keto Butter Pecan Cookies


  • 1 1/2 cups almond flour
  • 1/2 cup chopped pecans
  • 1/2 cup butter, softened
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt


  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, chopped pecans, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and erythritol until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually stir in the dry ingredients until well combined.
  6. Scoop the dough onto the prepared baking sheet using a cookie scoop or spoon, and flatten them slightly with your palm.
  7. Bake for 12-15 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
