Jalapeño Popper Chicken Casserole


  • 4 cups cooked chicken, shredded or diced
  • 8 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 can diced green chilies, drained
  • 1/2 cup diced jalapeños, seeds and membranes removed
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste


  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the cream cheese, sour cream, mayonnaise, diced green chilies, and diced jalapeños until well combined.
  3. Add the cooked chicken to the bowl and mix until the chicken is coated in the cream cheese mixture.
  4. Transfer the chicken mixture to a 9×13 inch baking dish.
  5. Sprinkle the Parmesan cheese and cheddar cheese on top of the chicken mixture.
  6. In a small bowl, mix together the panko breadcrumbs with a pinch of salt and pepper. Sprinkle the breadcrumb mixture on top of the cheese.
  7. Bake the casserole for 25-30 minutes, or until the top is golden brown and the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving.
