Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another mixing bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The batter may still have some lumps, which is okay.
- Heat a large non-stick skillet or griddle over medium heat. Add a small amount of butter or cooking spray to the skillet.
- Use a 1/4 cup measuring cup to scoop the batter and pour it onto the skillet. Cook the pancake for 2-3 minutes, or until bubbles form on the surface and the edges begin to look dry.
- Flip the pancake and cook for an additional 1-2 minutes, or until the pancake is cooked through and golden brown on both sides.
- Transfer the pancake to a plate and cover with a clean towel to keep warm. Repeat with the remaining batter, adding more butter or cooking spray to the skillet as needed.
- Serve the pancakes warm with your favorite toppings, such as butter, syrup, fruit, or whipped cream.
