Homemade Pancakes


  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • Butter or cooking spray, for cooking


  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another mixing bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. The batter may still have some lumps, which is okay.
  4. Heat a large non-stick skillet or griddle over medium heat. Add a small amount of butter or cooking spray to the skillet.
  5. Use a 1/4 cup measuring cup to scoop the batter and pour it onto the skillet. Cook the pancake for 2-3 minutes, or until bubbles form on the surface and the edges begin to look dry.
  6. Flip the pancake and cook for an additional 1-2 minutes, or until the pancake is cooked through and golden brown on both sides.
  7. Transfer the pancake to a plate and cover with a clean towel to keep warm. Repeat with the remaining batter, adding more butter or cooking spray to the skillet as needed.
  8. Serve the pancakes warm with your favorite toppings, such as butter, syrup, fruit, or whipped cream.
