Ingredients:
For the cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup milk
For the caramel:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cubed
For the frosting:
- 1 cup unsalted butter, at room temperature
- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the dry ingredients to the wet ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
- While the cake is baking, prepare the caramel. In a medium saucepan, whisk together the sugar and water over medium-high heat. Cook, without stirring, until the mixture turns a deep amber color, about 10 minutes. Remove from heat and immediately stir in the heavy cream and salt. Stir in the butter until fully incorporated.
- Let the caramel cool to room temperature.
- To make the frosting, beat the butter until light and fluffy. Gradually add the powdered sugar, alternating with the heavy cream and vanilla extract, until the frosting is smooth and creamy.
- Once the cake has cooled, level the tops of the cakes and spread a layer of frosting on top of one of the cakes. Drizzle a generous amount of caramel on top of the frosting. Place the second cake on top and repeat, frosting the top and drizzling caramel over the top of the second cake.
