Keto Homemade Caramel Cake



Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup milk



For the caramel:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cubed



For the frosting:

  • 1 cup unsalted butter, at room temperature
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Add the dry ingredients to the wet ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
  6. While the cake is baking, prepare the caramel. In a medium saucepan, whisk together the sugar and water over medium-high heat. Cook, without stirring, until the mixture turns a deep amber color, about 10 minutes. Remove from heat and immediately stir in the heavy cream and salt. Stir in the butter until fully incorporated.
  7. Let the caramel cool to room temperature.
  8. To make the frosting, beat the butter until light and fluffy. Gradually add the powdered sugar, alternating with the heavy cream and vanilla extract, until the frosting is smooth and creamy.
  9. Once the cake has cooled, level the tops of the cakes and spread a layer of frosting on top of one of the cakes. Drizzle a generous amount of caramel on top of the frosting. Place the second cake on top and repeat, frosting the top and drizzling caramel over the top of the second cake.
  10. Serve and enjoy!
