- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup water
- 1/2 cup vegetable oil
- 2 tablespoons white vinegar
- 1 teaspoon vanilla extract
- 12 large marshmallows
- 12 Hershey’s chocolate bars, broken into pieces
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the water, vegetable oil, white vinegar, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, whisking until just combined.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove the cupcakes from the oven and turn on the broiler.
- Top each cupcake with a large marshmallow and place the cupcakes under the broiler for about 30 seconds, or until the marshmallows are golden brown and toasted.
- Remove the cupcakes from the oven and immediately press a piece of Hershey’s chocolate onto the top of each marshmallow.
- Let the cupcakes cool completely before serving.
