Ingredients:

  • 6 large eggs
  • 1/4 cup milk or heavy cream
  • Salt and pepper, to taste
  • 1/2 cup grated cheese
  • 1/2 cup diced cooked bacon, ham, or sausage
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped spinach or kale
  • Optional: diced onion, garlic powder, dried herbs, hot sauce, or other seasonings

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 12-cup muffin tin with cooking spray or butter.
  2. In a large mixing bowl, whisk together the eggs, milk or heavy cream, salt, and pepper until frothy.
  3. Add the cheese, diced meat, bell pepper, spinach or kale, and any other desired seasonings to the egg mixture. Stir well to combine.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake the egg bites for 20-25 minutes, or until they are puffy and golden brown on top.
  6. Remove the egg bites from the oven and let them cool for a few minutes in the muffin tin before removing them with a spoon or spatula.
