Easy Keto Chicken Cordon Bleu Casserole


  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 lb thinly sliced ham, chopped
  • 1/2 lb thinly sliced swiss cheese, chopped
  • 1 cup heavy cream
  • 1/2 cup mayonnaise
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 2 tbsp dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with non-stick cooking spray.
  3. Arrange the chicken pieces in the bottom of the baking dish.
  4. Top the chicken with the chopped ham, followed by the chopped swiss cheese.
  5. In a medium-sized mixing bowl, whisk together the heavy cream, mayonnaise, almond flour, parmesan cheese, dijon mustard, minced garlic, dried thyme, salt, and pepper until well combined.
  6. Pour the mixture over the chicken, ham, and cheese in the baking dish.
  7. Bake the casserole in the preheated oven for 35-40 minutes, or until the top is golden brown and the chicken is cooked through.
  8. Let the casserole cool for a few minutes before serving.
