Easy Cinnamon Roll Coffee Cake


  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract


  1. Preheat the oven to 350°F (175°C). Grease a 9-inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, mix together the melted butter, brown sugar, and cinnamon.
  6. Pour half of the batter into the prepared pan, then sprinkle half of the cinnamon mixture over the batter.
  7. Pour the remaining batter over the cinnamon mixture, then sprinkle the remaining cinnamon mixture on top.
  8. Use a knife to swirl the cinnamon mixture into the batter.
  9. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool for 10 minutes, then make the glaze by whisking together the powdered sugar, milk, and vanilla extract.
  11. Drizzle the glaze over the warm cake.
  12. Serve and enjoy!
