Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chili powder
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- Salt and pepper, to taste
- Chopped cilantro, for garnish
- Avocado, sliced, for garnish

Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chicken and cook until browned on all sides.
- Add the onion and garlic and sauté for 2-3 minutes until the onion is soft and translucent.
- Add the cumin, smoked paprika, and chili powder and stir to combine.
- Pour in the chicken broth, diced tomatoes, and black beans, and stir to combine.
- Bring the mixture to a simmer and cook for 15-20 minutes.
- Add the chopped bell peppers and zucchini and continue to simmer for an additional 10-15 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with chopped cilantro and sliced avocado.
