• 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • Salt and pepper, to taste
  • Chopped cilantro, for garnish
  • Avocado, sliced, for garnish


  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chicken and cook until browned on all sides.
  3. Add the onion and garlic and sauté for 2-3 minutes until the onion is soft and translucent.
  4. Add the cumin, smoked paprika, and chili powder and stir to combine.
  5. Pour in the chicken broth, diced tomatoes, and black beans, and stir to combine.
  6. Bring the mixture to a simmer and cook for 15-20 minutes.
  7. Add the chopped bell peppers and zucchini and continue to simmer for an additional 10-15 minutes, or until the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Ladle the soup into bowls and garnish with chopped cilantro and sliced avocado.
