Ingredients:
- 2 cups shredded cheddar cheese
- 2 tablespoons unsalted butter, softened
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 2-4 tablespoons cold water

Instructions:
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, combine the shredded cheddar cheese, softened butter, all-purpose flour, salt, and cayenne pepper (if using). Use a pastry cutter or your hands to work the mixture into a crumbly dough.
- Add 2 tablespoons of cold water to the dough and stir until the dough starts to come together. If the dough is too dry, add more water 1 tablespoon at a time until it reaches the desired consistency.
- Form the dough into a ball and transfer it to a lightly floured surface. Use a rolling pin to roll the dough out to about 1/8 inch thickness.
- Use a sharp knife or pizza cutter to cut the dough into small, even squares or rectangles.
- Transfer the crackers to a baking sheet lined with parchment paper, leaving a little space between each cracker.
- Bake the crackers in the preheated oven for 12-15 minutes, or until they are golden brown and crispy.
- Remove the crackers from the oven and let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
- Store the cheese crackers in an airtight container at room temperature for up to a week.
