- 1 pound Italian sausage links (sweet or hot)
- 3 bell peppers (red, green, and yellow), sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- In a skillet over medium-high heat, brown the sausage links on all sides. You don’t need to cook them through, just get some color on them.
- While the sausage is browning, slice the peppers and onions and mince the garlic.
- Transfer the browned sausages to the slow cooker. Add the sliced peppers, onions, and minced garlic on top.
- In a separate bowl, mix together the diced tomatoes, tomato paste, dried basil, dried oregano, salt, and pepper. Pour the tomato mixture over the sausage and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the sausage is cooked through and the vegetables are tender.
- Once done, you can serve the sausage and peppers on their own, or with your favorite side dish like rice or pasta.
