Crockpot sausage and peppers

Ingredients:

  • 1 pound sweet Italian sausage, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 tablespoon tomato paste

Instructions:

  1. In a large skillet over medium-high heat, brown the sausage slices on both sides, about 5 minutes. Transfer the sausage to the slow cooker.
  2. Add the sliced bell peppers and onions to the skillet and cook until softened, about 5 minutes. Add the garlic, oregano, salt, and black pepper, and cook for 1 minute longer. Add the tomato paste and diced tomatoes, and stir to combine.
  3. Pour the tomato and pepper mixture over the sausage in the slow cooker. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Serve the sausage and peppers over pasta, rice, or with crusty bread.
