Creamy Tomato Tortellini Soup
Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 8 oz cheese tortellini
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish (optional)
Instructions:
- Sauté Aromatics:
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Cook until softened, about 5 minutes.
- Add Tomatoes and Broth:
- Add the crushed tomatoes and broth to the pot.
- Bring the mixture to a simmer and let it cook for about 10 minutes.
