Ingredients:
- 1/2 cup chia seeds
- 2 cups unsweetened almond milk (or any milk of your choice)
- 1-2 tablespoons honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract (optional)
- Toppings of your choice (e.g. fruit, nuts, shredded coconut)

Instructions:
- In a mixing bowl, whisk together the chia seeds, almond milk, sweetener (if using), and vanilla extract (if using).
- Cover the bowl and refrigerate for at least 2 hours, or overnight.
- After the chia seeds have soaked up the liquid and the mixture has thickened, give it a stir to make sure there are no clumps.
- Divide the chia seed pudding into serving bowls or jars and add your desired toppings.
- Serve and enjoy!
Note: The pudding will keep in the refrigerator for up to 5 days, so you can make a big batch and enjoy it throughout the week.
