Cheesy Sausage Potato Soup
Ingredients:
- 1 pound sausage
- 1 onion, diced
- 1 clove garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 4 cups potatoes, peeled and diced
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped green onions, for garnish (optional)
Instructions:
- Cook Sausage:
- In a large pot or Dutch oven, cook the sausage over medium heat until it is no longer pink. Remove the sausage from the pot and set it aside.
- Sauté Vegetables:
- In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent, about 5-7 minutes.
- Add Flour:
- Stir in the all-purpose flour until well combined, and cook for 1 minute to remove the raw flour taste.
- Add Liquids and Potatoes:
- Add the chicken broth, diced potatoes, and milk to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer until the potatoes are tender, about 20 minutes.
- Combine and Melt Cheese:
- Stir in the cooked sausage and shredded cheddar cheese until the cheese is melted and the soup is well combined.
- Season and Serve:
- Season with salt and pepper to taste.
- Garnish with chopped green onions, if desired, and serve hot.
