Cheesecake bites


For the crust:

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract


  1. Preheat the oven to 325°F (160°C). Line a 9-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking pan to create an even layer.
  4. In a large mixing bowl, beat the cream cheese and sugar together until light and fluffy.
  5. Add the egg and vanilla extract to the cream cheese mixture and beat until well combined and smooth.
  6. Pour the filling over the crust and spread it out evenly.
  7. Bake the cheesecake for 25-30 minutes or until the edges are lightly golden brown and the center is set.
  8. Let the cheesecake cool completely in the pan on a wire rack.
  9. Once the cheesecake is cool, lift it out of the pan using the parchment paper overhang and transfer it to a cutting board.
  10. Use a sharp knife to cut the cheesecake into small bite-size squares.
  11. Chill the cheesecake bites in the refrigerator for at least 1 hour before serving.
