Brown Sugar Peach Cake


  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 3 ripe peaches, peeled and sliced
  • 2 tablespoons brown sugar, for topping


  1. Preheat the oven to 350°F. Grease a 9-inch cake pan.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, until the batter is smooth.
  4. Pour the batter into the prepared cake pan and smooth the top. Arrange the sliced peaches on top of the batter in a single layer. Sprinkle with the remaining brown sugar.
  5. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool for at least 10 minutes before slicing and serving.
  7. Serve warm or at room temperature with whipped cream or vanilla ice cream, if desired.
