Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup chopped broccoli florets
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- Olive oil

Directions:
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, cut a pocket into each chicken breast. Be careful not to cut through the other side.
- In a mixing bowl, combine the chopped broccoli florets, shredded cheddar cheese, mayonnaise, sour cream, garlic powder, salt, and pepper.
- Spoon the broccoli cheddar mixture into each chicken breast pocket, filling it completely. Use toothpicks to secure the pockets if necessary.
- Heat a small amount of olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
Optional: Garnish with chopped fresh parsley before serving.
