Broccoli Cheddar Stuffed Chicken


  • 4 boneless, skinless chicken breasts
  • 1/2 cup chopped broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • Olive oil


  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, cut a pocket into each chicken breast. Be careful not to cut through the other side.
  3. In a mixing bowl, combine the chopped broccoli florets, shredded cheddar cheese, mayonnaise, sour cream, garlic powder, salt, and pepper.
  4. Spoon the broccoli cheddar mixture into each chicken breast pocket, filling it completely. Use toothpicks to secure the pockets if necessary.
  5. Heat a small amount of olive oil in a large oven-safe skillet over medium-high heat.
  6. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Remove the chicken from the oven and let it rest for 5 minutes before serving.

Optional: Garnish with chopped fresh parsley before serving.
