- 2 cans of salmon, drained and flaked
- 2 eggs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red bell pepper
- 1/4 cup almond flour
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2-3 tablespoons olive oil
In a large mixing bowl, combine the flaked salmon, eggs, chopped onion, chopped celery, chopped red bell pepper, almond flour, Dijon mustard, lemon juice, dried dill, salt, and black pepper.
- Mix all the ingredients together until well combined.
- Form the mixture into 8-10 patties.
- Heat the olive oil in a large skillet over medium-high heat.
- Carefully place the salmon patties into the hot oil and cook for 3-4 minutes on each side, or until they are golden brown and cooked through.
- Once the patties are cooked, remove them from the skillet and place them on a paper towel to absorb any excess oil.
- Serve the salmon patties with your favorite sauce, side salad or roasted veggies.
