Best salmon patties!

Ingredients:

  • 2 cans of salmon, drained and flaked
  • 2 eggs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup almond flour
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons olive oil

Instructions:

In a large mixing bowl, combine the flaked salmon, eggs, chopped onion, chopped celery, chopped red bell pepper, almond flour, Dijon mustard, lemon juice, dried dill, salt, and black pepper.

  1. Mix all the ingredients together until well combined.
  2. Form the mixture into 8-10 patties.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Carefully place the salmon patties into the hot oil and cook for 3-4 minutes on each side, or until they are golden brown and cooked through.
  5. Once the patties are cooked, remove them from the skillet and place them on a paper towel to absorb any excess oil.
  6. Serve the salmon patties with your favorite sauce, side salad or roasted veggies.
