- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 head of broccoli, chopped into florets
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 1 cup of grated cheddar cheese
- Salt and pepper to taste
Instructions:
- Sauté Aromatics:
- Heat the olive oil in a large pot over medium heat.

- Cook Broccoli:
- Toss in the chopped broccoli florets and pour in the chicken or vegetable broth. Bring the mixture to a gentle boil.
- Reduce the heat to medium-low and let the soup simmer for 10-15 minutes, allowing the broccoli to become tender and flavorful.
- Blend the Soup:
- Once the broccoli is soft, it’s time to blend the soup. You can use an immersion blender directly in the pot for convenience, or transfer the soup in batches to a blender or food processor. Blend until smooth and creamy.
- Note: If using a blender or food processor, be sure to let the soup cool slightly before blending and work in batches to avoid any accidents with hot liquid splattering.
- Add Cream and Cheese:
- Return the blended soup to the pot if necessary and place it back over medium heat.
- Stir in the heavy cream and grated cheddar cheese, allowing them to melt into the soup and create a rich, velvety texture. Keep stirring until the cheese is fully incorporated.
- Season and Serve:
- Season the soup with salt and pepper to taste, adjusting the seasoning according to your preferences.
- Once everything is well combined and heated through, your broccoli cheddar soup is ready to serve.
